3 COLUMNS, 20 PLATES, & A GIN BASKET: MEET ONE EYED JACK
Allow us to introduce the workhorse behind Hinterhaus: our 3 column, 20 plate hybrid still that we've taken to calling One Eyed Jack. We can't wait for the day when we can fire this puppy it, and that time edges closer as we near completion on our
renovations at the distillery.
There are many types of stills- from traditional pot stills to column stills. They are custom-made, incredible pieces of machinery that can be as simple or as sophisticated as its maker can imagine. One Eyed Jack came to us from Baton Rouge, Louisiana. We chose it for its versatility (OK, and its ability to fit under our ceiling). We'll be able to distill using just the copper whiskey column, or activate any combination of the other columns and plates to finetune the flavors of our made-in-Arnold spirits. One Eyed Jack also comes with a botanical basket which allows us to vapor infuse flavors for gins,
aquavit and other specialty spirits.
